***UPDATE: I have tried this recipe again and decided rutabaga is just… well….not that good! …. but this is still a good recipe, just sub the rutabaga with the below suggestions … I know why rutabagas are used for curling rocks now and not eaten ;)
The rutabaga is an interesting root vegetable that I always see at the grocery store and NEVER buy, until today! It goes by many other names including swede, in England and Ireland, a neep in Scotland and in the US a yellow or Swedish turnip. It is actually a cross between cabbage and turnip, which I like both of, so I wanted to give it a try!
I also discovered something totally cool about rutabagas, they are actually used for curling rocks in the International Rutabaga Curling Championship (…I love that this actually exists) held on the last market day of the year at the Ithaca Farmer’s Market in New York which can draw over a hundred contestants! I would love to see this! Although…. if there are always enough left over to use for this purpose maybe most people don’t buy them to eat?? :S ….. that being said I thought this slaw was pretty tasty, and I am always looking for recipes to include different vegetables in my diet, so I think this one is sticking around!
