The fermentation and preservation of foods is an ancient practice that has made a swift resurgence into the modern food scene. In the heart of Toronto’s Kensington Market, Bryan Lavers and Tye Thomas opened their shop, Thomas Lavers Cannery and Delicatessen, with impeccable timing. It was December 2012 – just when the fermentation buzz was ramping up. “It just seems like around the time we opened, fermenting and preserving became a very on point restaurant and food culture thing, we lucked out,” says Thomas.

Lavers, the hands-on professional chef, and Thomas, the curious home cook, are long-time friends that have over 40 years of combined experience working in food and cooking. They opened the cannery to fill a void in the neighbourhood’s offerings. Despite the incredible variety of options available at Kensington Market, it did not include a brick-and-mortar quite like the Thomas Lavers Cannery and Delicatessen.

Remembrance Day is over, so we can officially listen to Christmas carols, according to my cousin Marie. Most people seem to have some sort of rule about when it is OK to listen to Christmas music. Are carols fair game after Halloween, Thanksgiving, Remembrance Day or December 1st?

My most popular request when it comes to recipes –> easy and fast weeknight meals (along with a personal chef). This recipe falls perfectly into that category! A slow cooker is a great tool for easy meals as well but is a less popular option in the summer. Plus, this recipe is easy to get the men on board with because they get to do some grilling!

Cauliflower Steak, truffle egg

If truffle salt or oil is not something you keep around I highly recommend it. It adds great flavor to many dishes. If it’s not something you enjoy this recipe is great without it as well, so don’t fret!

You can also use cabbage instead of cauliflower for the steaks, I love both! Cabbage is a great vegetable to buy due to its long shelf life, save it in the fridge for when you run out of all your other veggies.

Did you know that when you buy a “yam” it is actually a sweet potato? A jewel sweet potato to be precise. It is very uncommon to find a true yam at your local grocery store. They are native to Africa (among other regions) and have a white, purple or reddish flesh. The USDA started calling the orange sweet potatoes “yams” to avoid confusion with the lighter fleshed variety.

I have been on a roasted vegetable kick lately and roasting all kinds of vegetables I haven’t before, like radishes!

My usual way of eating radishes is very “un-dietitian” like of me: I dip the halves in salt! So addicting.

I can blame my preceptor from my dietetic internship up in Prince George (Northern BC) for this addiction. She told me she stopped eating radishes because this was the only way she ate them, so naturally, I had to try it.  Don’t do it.

We all need some sodium – 1500mg sodium per day to be precise. That being said, on average Canadians get about 3400 mg per day! Reducing our intake to 2000 mg or less per day may help lower blood pressure and improve our over all health.

The transformation that takes place from raw to roasted vegetables in just a few simple steps is amazing. The colour, flavour, and smell of the vegetables are wonderful. My diet is chalked full of all kinds of roasted vegetables, but roasted fruit is new to me – it is just as wonderful! Eating the rinds of the oranges in this recipe seemed a little odd at first, but they get nice and soft and sweet. The orange rinds are actually my favourite part of this dish!

Raw fennel is not my thing, but when it is roasted it is so much more subtle and delicious. I can’t believe it is the same vegetable. Fennel has many health benefits as well which I mentioned in a previous post here.
